Abstract

The blood glucose response and the glycemic index (GI) were studied for the heart of palm of the Khadrawi species in Iraq. Twelve Iraqi students (4 males and 8 females) volunteered for this study. The group consumed powdered for the heart of the palm and there are three repeated tests of reference foods that were colucose. Blood tests were taken immediately as blood sugar for the fasting person (0) minutes and then (15, 30, 45, 60, 90 and 120) minutes of consumption of the gammer, then measuring the level of blood glucose and by calculating the distance Defined under the curve in the blood incremental area under the curve (IAUC) and then calculated from the sugar index (GI). This study showed that the average age was 21.125 years. The average body mass index (BMI) was 19.33, which was within the normal body mass index (BMI). The quantitative content of isolated compounds found at 45.97, 0.053, and 16.41 mg / g was determined for phenolic compounds, flavonoids and tannins, respectively, in the palm of the plant species. These isolated compounds were diagnosed by qualitative and quantitative estimation and by the FT-IR infrared technique.
